NingXia (almost raw) Chocolate Brownies

You can cut these up for lunch boxes, afternoon tea or special crash-in-front-of-a-good-DVD-‘cos-the-children-are-in-bed evening treat, just watch the cacao sensitivity (natural caffeine). I even made one in a tiny spring-form pan for my daughter’s 4th birthday celebration…

  • 2 cups raw almonds or walnuts
  • 10 fresh soft pitted dates
  • ½ cup goji berries
  • 2 tablespoons coconut oil
  • 1 tablespoon vanilla water
  • 3 tablespoons cacao powder
  • pinch sea salt
  • 30 ml NingXia Red

  1. place almonds into a food processor and process until broken up roughly
  2. add cacao powder, and sea salt, process again for a few seconds until combined
  3. add dates and process again until the dates have distributed evenly throughout the almonds
  4. add the goji and process again until goji in small chunks distributed throughout mixture
  5. add coconut oil and process again until combined
  6. add NingXia Red – just enough so that the mixture sticks together when squeezed together
  7. spoon mixture into a bowl
  8. press into a 15 cm square tray lined with baking paper
  9. refrigerate for 2 hours to set
  10. cut into small pieces, and serve with your choice of berries…

  • In Australia, some of Young Living’s oils are in the process of being listed as food additives. Once that occurs, and new labels appear on the bottles, we’ll be able to promote the use of these essential oils in cooking. In the meantime, you can flavor your chocolate slice with grated ginger, peppermint leaves, grated orange rind, rosewater.

Blend these ingredients in a good food processor (like a Thermomix) and pour into a tray. Pop in the fridge to set, then slice. Begins to melt at room temperature, so eat chilled.
